Sister Sarah is a semi-soft goats' milk cheese that is matured for up to 12 weeks. The cheese has a white paste as goats' digest all the carotene in the grass. It has a moreish caramel flavour without too much of the 'goatiness' which is often associated with a goat cheese. We paint the rind of the cheese with an attractive red coloured made from annatto.
